Speedy Pork Noodles

Sometimes all you feel like is a bowl of noodles. This is my go too speedy noodle dish and I adore it simple because as the title says they’re speedy but also delicious. I personally love udon noodles especially in a ramen but of course you can always substitute the udon noodles for rice especially if you prefer a gluten free option. I saw this original recipe on Marions Kitchen and had to make it with some tweaks along the way.
Ingredients:
500g mince pork
1 bunch of bok choy – roughly chopped into 3cm batons
2tsp sesame oil
2 tbsp neutral oil like canola or rice bran
1 broccoli – florets
1/2 bunch of shallots – sliced
1tbsp fresh ginger – grated
5 cloves garlic – crushed
1/4 cup soy sauce
3-4tbsp ketchup manis (sweet soy)
500g udon noddles (found on the shelf)
Method:
- Place a large stir fry pan on medium high heat. Add neutral oil, sesame oil, garlic, shallots, ginger and stir for a minute. Add in mince and brown, breaking up any lumps.
- Bring a medium pot of water to boil. Cook noodles as per packet instructions and drain.
- While noodles are cooking, add broccoli and bok choy and toss through. Add soy sauce, ketchup manis and fold through noddles.
Notes:
- Substitute pork mince with chicken, beef, turkey if you prefer.
- Other vegetables such as baby corn, zucchini, capsicum, carrot, onion, cabbage also taste amazing in this dish.
- Firm tofu can be added. Simply grill at the beginning of the cooking process with neutral oil and sesame oil, remove from pan while you brown mince off and then fold through at the same time as the noodles.
- If you would like to make this a stir fry simply leave out noodles.
- Rice noodles also taste amazing if you prefer a gluten free alternative.
- For some heat add some chilli oil to serve.
- For some added crunch, serve with fried shallots that can be found in the international aisle of your supermarket or an asian grocer.
