One Tray Mediterranean Dinner Bake
Can I get a hands up for all the people who love a one tray bake. I love a good one tray wonder that I can prep in advance and place in the oven is really becoming more and more my kind of meals. This is a simple yet delicious meal and I hope you love the flavour and time saving meal that this dish speaks.

Ingredients:
12 gourmet sausages
5-6 large Desiree potatoes, cut into wedges
1/2 cup roughly chopped flat leaf parsley
100g pitted kalamata olives
2 tablespoons dried oregano leaves
1/2 teaspoon ground garlic
1 teaspoon chicken stock powder disolved in 1/4 cup warm water
1/4 teaspoon ground black pepper
1/2 lemon juice
EVOO
100g Greek feta, crumbled
Method:
- Pre heat oven at 200C fan forced. In a large deep baking tray place sliced potatoes, parsley, olives, oregano, lemon juice, garlic and stock powder & water and season with pepper and an optional pinch of salt (remember the sausages and feta will add salt to the dish, I personally do not add any) and drizzle some EVOO and mix.
- Place in the oven uncovered and bake for 30 minutes.
- Take tray out and toss the potatoes before wedging the sausages into the potatoes. Crumble the feta evenly across the surface and place it back in the oven to cook for a further 15-20 minutes or until potatoes and sausages are cooked through.
Serve with a simple garden salad.
