Dulce De Leche Cookies (Alfajores)

These melt-in-your-mouth dulce de leche cookies are inspired by the comforting sweets of Venezuela, where caramelised condensed milk is a staple of home kitchens and childhood memories. Soft, buttery, and delicately crumbly, each cookie gently gives way to a rich dulce de leche centre that tastes like slow afternoons, family gatherings, and recipes passed down without measurements. They’re not overly sweet, just deeply nostalgic – the kind of treat meant to be enjoyed with coffee, shared at the table, and lingered over. A small bite that carries the warmth, generosity, and soul of Venezuelan baking.

Dulce De Leche (Alfajores)

Cooking Time: 30 minutes | Makes: approx 24 cookies

Ingredients:

  • 225 grams unsalted butter, room temperature
  • 1/2 cup icing sugar
  • 2 teaspoons vanilla bean extract
  • 2 egg yolks
  • 1/4 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1/2 cup store bought dulce de leche or tinned caramel

    Method:

    1. Line 2-3 baking trays with baking paper
    2. Place butter in the bowl of a stand mixer with paddle attachment. Cream for 2 minutes until very light and fluffy.
    3. Add icing sugar and vanilla bean paste and cream for another minute.
    4. Add yolks, one at a time, waiting for one yolk to incorporate before adding the next one.
    5. Sift in flour and salt and mix on low until just incorporated. Do not over mix.
    6. Scoop and roll 1 tablespoon balls and place a couple of inches apart. Use the back of a 1/2 teaspoon measuring spoon to make a well in the centre of each cookie.
    7. Pour dulce de leche or caramel into a piping bag and snip a very small tip off the end. Pipe the centre of each cookie until it is filled.
    8. Pre heat oven at 180C
    9. Place cookies into the freezer for 15minutes while oven pre heats
    10. Bake cookies for 8-10 minutes until slightly golden around the edges. Sprinkle with sea salt flakes for an optional salted caramel flavour.
    11. Allow cookies to cool in tray for a further 10-15minutes until transferring. Eat once completely cool.

    Tips/Substitutions:

      • Can be frozen in an airtight container for up to 3 months
      • These cookies can be filled with anything, use jams, chocolate etc…
