Salads get a bad wrap because 9/10 the dressing tastes like shit, and don’t even start me on the pre made dressings in a jar that taste terrible. I am all here for amazing salads that stand out and make you want to eat a massive bowl to yourself. This dressing will not disappoint.

Creme Fraiche & Dill Summer Salad


Ingredients:

Salad:
3 baby cos heart lettuce – sliced lengthways
cherry tomatoes – 200g, sliced in half
5 green/spring onions, finely sliced
1 large cucumber – diced

Dressing:
Creme Fraiche 200ml
100ml capers
1-2 cloves garlic, crushed
1/4 cup chopped fresh dill
juice of 1 lemon
S&P

Method:

  • Combine all dressing ingredients in a small bowl and set aside.
  • Assemble salad in a large platter. Pour half the dressing all over and enjoy.

    Notes:

    • Dressing keeps well refrigerated in a jar for 5days so keep that other half of the dressing on standby for another day
