400g tin corn, drained and rinsed OR fresh corn grilled and cut off the cob
1 large tomato – finely diced
1 large cucumber – finely diced
1/2 red capsicum – finely diced
1 red onion – finely diced
1/2 avocado – cut into small cubes
1/4 cup finely chopped fresh coriander
Juice of 1 lime
4 tbsp of olive oil

2 cloves of garlic
1/4 cup roughly chopped fresh coriander
2tbsp pickled jalapeños OR 1 long red chilli
Juice of 1 lime
4tbsp olive oil
