Fresh herb and olive oil cubes

If you you’re like me and hate wasting food, especially herbs then you will love this tip. I do this all the time so that I have some on standby for the months that there is not many fresh herbs around. These cubes are perfect to add to salads, dressings, marinades, soups, casseroles, dishes, the list goes on…
- 1-1.5 cups fresh herbs. I like to use thyme, lemon thyme, oregano, parsley
- light olive oil
- Wash all fresh herbs and spin/pat dry
- Remove leaves and mix together in a bowl
- Place herbs in ice cube trays 3/4 full
- Pour olive oil over the herbs and place into the freezer until set.
- Remove from freezer and place cubes into a zip lock bag or container until ready to use.
- These cubes are perfect to add to salads, dressings, marinades, soups, casseroles, dishes etc
- Keep in the freezer for 6 months.
