Bounty Inspired Protein Balls

Easy no bake bounty inspired protein balls without the use of protein powder. 

Bounty inspired protein balls

Cooking Time: 15 minutes Makes: Approx 10 balls

Ingredients:

 

  • 1 cup dates, pitted
  • 1/2 cup almonds (peeled)
  • 1/2 cup desiccated coconut
  • 1/3 cup almond butter
  • 4 tbsp cacao powder
  • 1 tablespoon maple syrup
  • 1 tsp vanilla
  • Good pinch of sea salt
  • 1–2 tsp water, only if needed

Extra desiccated coconut for rolling. 

Method:

  1. Blitz the almond nuts until they’re a coarse meal in a food processor.
  2. Add the dates, coconut, almond butter, cacao, vanilla and salt. Process until everything comes together into a sticky, fudgy mixture.
  3. If it’s a little dry, add water 1 teaspoon at a time – you may not need any if your dates are really soft.
  4. Roll into 1 tablespoon balls and then coat generously in coconut – refrigerate for 20 minutes.

Tips/Substitutions:

    • Keep in an airtight container in the fridge for up to 5 days
