Sometimes all you feel like is a bowl of noodles. This is my go too speedy noodle dish and I adore it simple because as the title says they’re speedy but also delicious. I personally love udon noodles especially in a ramen but of course you can always substitute the udon noodles for rice especially if you prefer a gluten free option. I saw this original recipe on Marions Kitchen and had to make it with some tweaks along the way.
500g mince pork
Cooking Time: 1hour

Another meatless Monday dish that really doesn't have to be made on a Monday at all. I had a big tin of tuna in the pantry with a bunch of random other pantry staples I wanted to use up like spaghetti, panko breadcrumbs and some herbs in the fridge that had seen better days. So I decided to wing this pasta and see how it turned out, and it turned out amazing alright.
I had a lot of Easter chocolates and had to really get savvy with using them up and getting them out of my site otherwise I would have really eaten them all. So I thought I would make a loaf of my banana bread and add a swirl of melted chocolate through it and see how it would turn out... Well the recipe made the blog so it is definitely a winner.

Can I get a hands up for all the people who love a one tray bake. I love a good one tray wonder that I can prep in advance and place in the oven is really becoming more and more my kind of meals. This is a simple yet delicious meal and I hope you love the flavour and time saving meal that this dish speaks.

Za’atar is one of those spices that speaks to my childhood like no other. za'atar is generally a combination of dried oregano, thyme, and/or marjoram, with sumac and toasted sesame seeds. It is a perfect balance in acid, tangy, and earthy flavours. This spice is commonly added to dough that has been rolled out with EVOO and cooked in a wood fire oven served for breakfast with labne, tomatoes and cucumber. I recreated my version of this in my cookbook “1 dough 10 recipes” with a cracked egg in the centre.
Here is another way you can use this...
