This dish is PERFECT for this warm weather season where you don't want to stand at the stove and slave. It is a no cook sauce and I have to say it is one of the most easy yet delicious meatless Monday dishes I have created..
500g pasta, spaghetti (you can use whatever pasta shape you like)
400g fresh ricotta
2 lemons, 2 slices of rind and the zest of the rest and juice of 1
1 teaspoon salt
1/2 teaspoon crushed black pepper
1/4 cup grated pecorino cheese
1/4 cup roughly chopped flat leaf parsley
1/8 cup finely diced chives
When I think back at childhood memories eating hot chips it was always ordered with vinegar... Now if you have never experienced this than you're going to want to really give this recipe a go. I saw the amazing @cfassnidge make this and had to make them myself....

8-10 Desiree potatoes, cut into big chunks
Salt & ground black pepper
Rice bran oil, for roasting
6 cloves of garlic, crushed
1 cup of fresh mixed herbs of choice...
Salads get a bad wrap because 9/10 the dressing tastes like shit, and don't even start me on the pre made dressings in a jar that taste terrible.
I am all here for amazing salads that stand out and make you want to eat a massive bowl to yourself. This dressing will not disappoint.
If it is one thing that comes to mind when sitting down and thinking what is a dish that everyone will eat, it's tacos! So of course I had to share it with you. This avocado sauce is everything and sooooo worth the make.
