If its one pasta shape that I love it is these large pasta shells, purely because it is basically like a mini bowl that has all this sauce scooped right into it… This pasta is so quick and easy to make but also has an amazing punch in flavour.
500g pasta large shells
200g bacon - diced
1/2 cup finely diced celery
6 shallots/green onions - sliced on and angle
200g button mushrooms - sliced
4 cloves of garlic - crushed
2tbsp ground smoked paprika
1tsp ground nutmeg
300ml light cream
1/2 cup - roughly chopped fresh flat leaf parsley
zest of one lemon
200g baby spinach leaves
1. Bring large pot of water to boil. add salt
2. In a deep pot, on medium high heat add a small glug of olive oil and sauté bacon. Add diced celery and spring onions and cook for a few minutes until softened. Stir in sliced mushrooms and cook for a minute.
3. Add garlic, smoked paprika, nutmeg, and cream. Fold in parsley, lemon zest and spinach. Turn heat down to low and simmer just until pasta is finished cooking.
4. strain and fold in pasta with 1/2 a ladle of pasta water. Stir and enjoy.
