Overnight Soaked Oats

Personally, I am an eggs for breakfast kind of girl BUT two kids later and a busy schedule I needed to come up with something on the go… Like I mean bare minimum prep. SO I saw this superfood mix in Aldi I was all over it. I basically make this bulk mix and makes a month’s worth of supply… I know right! All you need to do is mix it all in a bowl, pop it into a massive jar or two and then the night before put a few scoops into a container with some maple syrup and milk of choice and pop it into the fridge to soak overnight and it’s good to go. The superfood mix that makes this soaked oats whip up is a combination of dried fruit (cranberries, raisins, goji berries, Inca berries & blueberries) almonds, seeds (pepita & sunflower) and coconut.

  • 750g quick oats
  • 1/4 cup cocoa
  • 350g chia seeds (black of white doesn’t matter)
  • x1 packet (400g) of Aldi’s Forrester’s Superfood Mix (NOTE: If you do not like this mix there is a paleo mix in Aldi similar that does not have the berries incorporated and is equally delicious)

  1. Mix in a large mixing bowl and transfer to an airtight container.

Top tips:

To soak overnight, place 70g in a jar/container with 1tsp maple syrup and 3/4cup of milk of choice (I use almond)

This is also super yummy for the kiddies if they aren’t allergic to any of the ingredients.

The following morning you can add some fresh berries and a dollop of yoghurt or even some natural peanut butter if you wish and you are good to go.
