Can I get a hands up for all the people who love a one tray bake. I love a good one tray wonder that I can prep in advance and place in the oven is really becoming more and more my kind of meals. This is a simple yet delicious meal and I hope you love the flavour and time saving meal that this dish speaks.
10 gourmet sausages
5-6 large Desiree potatoes, cut into wedges
1/2 cup roughly chopped flat leaf parsley
100g pitted kalamata olives
2 tablespoons dried oregano leaves
1/2 teaspoon ground garlic
1 teaspoon chicken stock powder
1/4 teaspoon ground black pepper & pinch of salt
1/2 lemon juice
100g Greek feta, crumbled
- Pre heat oven at 200C fan forced. In a large deep baking tray place sliced potatoes, parsley, olives, oregano, lemon juice, garlic and stock powder and season with pepper and a pinch of salt (remember the sausages and feta will add salt to the dish) and toss.
- Add sausages and drizzle some EVOO and mix. Place in the oven uncovered and bake for 30 minutes. Take tray out and toss ingredients before crumbling feta evenly across the surface and placing it back in the oven to cook for a further 15-20 minutes or until potatoes are cooked through.
Serve with a simple garden salad or boiled rice.
