Lemon & Herb Eggs

I saw the gorgeous eyeswoon share this recipe Inso on her instagram page as she was chatting about her love for this whilst holiday’ing in Ibiza. If you know me by now you will know I love anything sour, so the lemon with sumac and fresh herbs was a must.

This is just a loose guided recipe as her nor I measured it because it really is to your liking. I hope this inspires you to jazz up your fried eggs. 

lemon and herb eggs

Ingredients:

1/4 cup finely diced mixed fresh herbs - I used dill, parsley, mint, and oregano

Pinch of sumac

Pinch of salt

Juice of 1/2 a lemon

1 tablespoon extra virgin olive oil

2 fried eggs

Method:

  1. In a small bowl add your finely diced fresh herbs, sumac, salt, lemon juice and olive oil. Stir
  2. Fry two eggs to your liking. I like to fry them with some light olive oil and season with some ground black pepper and a pinch of sea salt flakes.
  3. Add your eggs to a serving plate and drizzle some of the lemon & herb mixture over the top of the eggs.
  4. Serve with some toasted sourdough and Persian feta.
