Grilled Zucchini Herb Ribbons

Side dishes are so underrated and I am a sucker for a really good one but it has to be easy and jam packed with flavour.

Ingredients:

500g Zucchini, sliced in 5mm ribbons (lengthways)

Marinade:

1 long red chilli, finely diced

1/3 cup finely diced spring onions

1 cup roughy chopped fresh parsley

3 cloves of garlic, crushed

Juice of 1 Lemon

1 teaspoon salt

1/2 teaspoon cracked black pepper

1/4 cup extra virgin olive oil 

Method:

  1. Combine marinade ingredients in a large bowl and mix well.
  2. Place a large non stick pan on medium high heat. Spray olive oil in the pan and grill zucchini for 1-2 minutes on each side or until softened and charred in colour.
  3. Place zucchini in the bowl with the marinade and toss well. Pour into a serving platter and eat warm or slightly cool.

Perfect side dish with some grilled pork, beef or chicken.
