Radicchio, Peach and Feta Salad

Ingredients:

Salad
1 radicchio, chopped into quarters
3 ripe peaches, sliced
1/2 cup fresh flat leaf parsley
1/2 cup fresh mint leaves
100g danish feta (can use soft goats cheese)
1/3 cup almond flakes, dry toasted

Marinade
3 tablespoons EVOO
3 tablespoons pomegranate molasses
2 teaspoons balsamic vinegar
1 clove of garlic, crushed
1/2 teaspoon salt
pinch of ground black pepper

Method:
1. On a large platter arrange radicchio, peaches, parsley, mint, feta and almonds.
2. In a small jar or bowl, combine marinade and shake well
TIP: I measure out EVOO first so the pomegranate molasses can glide off the same tablespoon...

Ingredients:
800g chuck beef - cubed
1 large brown onion, finely diced
3 celery batons, finely diced
1 medium carrot, finely diced

1 long red chilli, deseeded & finely diced
3 cloves of garlic, crushed
3 bay leaves
4 cups roughly chopped silverbeet spinach
1/2 cup finely chopped parsley
3tbsp fresh thyme leaves
1 tin cannalini beans, drained & rinsed
2 cups chicken stock
1-2tsp salt
1/2 teaspoon black pepper

Ingredients:
1 large brown onion
3-4 cloves crushed garlic
500g lamb mince
1/2 teaspoon coriander, ground

1/4 teaspoon cumin, ground
1/2 teaspoon Hungarian/sweet paprika

Smashed Asian Cucumber Salad

I’ve had this salad out and LOVED it! So much so that when my parents gave me 2kg of fresh cucumbers I had to use them up to avoid them from going manky…. This salad came to mind and I loved @recipe_tin version I had to make it.


I served this with sticky lime ribs and rice. It also tastes amazing with dumplings.
