Soo... you know those nights when you're cooking a main dish and you think damn what can I serve this with.. Then this is it. If I could sit here and write a list of off the variations of stuffing I would be on par with David Attenborough's series on Antartica... Not even kidding. That being said, this is one of a zillion stuffing combinations I have done but you can really stuff them with whatever you have in your fridge like tomatoes, capsicums, or keep them simple with cheese and herbs.
Ingredients:
- 6 portobello mushrooms
- 1 cup of shredded mozzarella
- 1/2 cup of ham, sliced
- 100g gorgonzola
- 1 tbsp dried oregano
- S&P, Olive oil
Method:
- First things first - we need to clean these bad boys. Peel the outer layer of the mushroom and remove the stump gently with a spoon. Also, using a spoon gently scoop the inner black part of the mushroom.
- Pre-heat oven at 200 degrees. Line a baking tray and place mushrooms with the inner part facing up. Season with S&P and then layer ham, shredded cheese, gorgonzola, dried oregano and drizzle on some olive oil.
- Bake uncovered for approx. 15-20 min until slightly collapsed and golden.
